Peppermint Hot Chocolate Cookies

Hot chocolate peppermint cookies taste just like a mug of hot chocolate in cookie form and are perfect for a cold winter day.
These Christmas peppermint hot chocolate cookies are topped off with a golden marshmallow, yummy melted chocolate and crushed peppermint candy.

Ingredients

  • ½ cup melted butter
  • cups chocolate chips
  • 1 cup brown sugar
  • 3 eggs
  • 1 tsp peppermint extract
  • ¼ cup cocoa powder
  • 1 tsp baking soda
  • 2 cups flour
  • 30 large marshmallows
  • 30 small squares torn apart from 3 regular sized chocolate bars (about 3 oz)
  • ½ cup crushed candy canes or peppermint candies

Instructions

  • Microwave 2 cups of chocolate chips and butter in a microwave safe bowl on high for 1 minute. Be sure not to overcook and burn.
  • Stir the chocolate chips until completely melted. If not fully melted, microwave in 20 second increments until fully melted.
  • Mix in brown sugar, eggs, peppermint extract and cocoa powder.
  • Stir in baking soda and flour.
  • Chill dough for at least 1 hour (you can do this overnight as well and it makes the cookies even more fudgy).
  • Roll into 30 even balls and place on a parchment lined tray.
  • Bake at 350° for 12 minutes.
  • Remove cookies and press 1 piece of chocolate bar into each cookie. Then, place a marshmallow on top of each cookie.
  • Put cookies back into the oven and broil for 1 minute. Be sure to keep an eye on the cookies so they don’t burn.
  • Take cookies out of the oven and press each marshmallow down.
  • Microwave 1/2 cup of chocolate chips in a microwave safe bowl. Microwave in 20-second intervals until chocolate is completely melted, being careful not to burn it.
  • Drizzle melted chocolate on top of the cookies and sprinkle with crushed peppermint candy or candy canes.
