Air Fryer Zucchini with Parmesan

This air fryer Parmesan zucchini is an easy snack, side, or appetizer that everyone will love. Zucchini is coated with panko bread crumbs and fresh Parmesan, then air-fried to golden perfection.

Ingredients

  • 2 medium zucchini
  • 1 tbsp avocado oil (or favorite cooking oil)
  • 2 tbsp panko breadcrumbs
  • 2 tbsp fresh grated Parmesan cheese
  • 1 tbsp flour
  • ½ tsp garlic powder

Instructions

  • Preheat the air fryer to 400°F.
  • Slice the zucchini into ½ - ¾ inch thick rounds. Pat dry with a paper towel to remove moisture. Then, cut the rounds in half. Discard the ends.
  • Place the cut zucchini into a medium mixing bowl. Drizzle zucchini with avocado oil, and toss to coat.  
  • In a small bowl, mix together the panko, Parmesan, flour, and garlic powder. Sprinkle the mixture over the zucchini, then toss until evenly coated.
  • Arrange the zucchini in a single layer in the air fryer basket. Air fry for 5 minutes, then shake the basket.
  • Air fry the zucchini for another 5 minutes or until golden and crispy.
