2mediumzucchini
1tbspavocado oil (or favorite cooking oil)
2tbsppanko breadcrumbs
2tbspfresh grated Parmesan cheese
1tbspflour
½ tspgarlic powder
Instructions
Preheat the air fryer to 400°F.
Slice the zucchini into ½ - ¾ inch thick rounds. Pat dry with a paper towel to remove moisture. Then, cut the rounds in half. Discard the ends.
Place the cut zucchini into a medium mixing bowl. Drizzle zucchini with avocado oil, and toss to coat.
In a small bowl, mix together the panko, Parmesan, flour, and garlic powder. Sprinkle the mixture over the zucchini, then toss until evenly coated.
Arrange the zucchini in a single layer in the air fryer basket. Air fry for 5 minutes, then shake the basket.
Air fry the zucchini for another 5 minutes or until golden and crispy.
