Crockpot Chicken Fajita Pasta
This crockpot Chicken Fajita Pasta combines fajita seasoning with creamy pasta for a hearty, family friendly dinner.

- 1½ pounds boneless, skinless chicken breasts
- 1 tsp Salt
- ½ tsp black pepper
- 1 ounce fajita seasoning
- 1 red bell pepper sliced
- 1 green bell pepper sliced
- 1 small small onion sliced
- ½ cup chicken broth
- 1 (10 ounce) can tomatoes with green chiles drained
- 3 gloves garlic chopped
- 1 cup heavy cream
- 12 ounces penne pasta cooked
- 1½ cups shredded Mexican-blend cheese
Season the chicken on all sides with the salt, pepper, and fajita seasoning.
Place the seasoned chicken in the bottom of the slow cooker.
Top with the sliced bell peppers, onion, chopped garlic, and drained tomatoes with green chiles.
Pour the chicken broth over everything.
Cover and cook on Low for 4 to 5 hours, or until the chicken is tender and shreds easily.
Shred the chicken with two forks, then stir in the heavy cream.
Add the cooked penne pasta and shredded Mexican-blend cheese. Stir until the cheese is melted and everything is well combined. Serve warm.
