1. Slice the zucchini into ½ – ¾ inch thick round pieces. Pat dry with a paper towel to remove moisture
2. Cut the rounds in half and discard the ends.
3. Place the cut zucchini into a medium mixing bowl. Drizzle zucchini with avocado oil, and toss to coat.
4. In a small bowl, mix together the panko, Parmesan, flour, and garlic powder.
5. Sprinkle the panko mixture over the zucchini, then toss until evenly coated.
6. Arrange the zucchini in a single layer in the air fryer basket. Air fry for 5 minutes, then shake the basket. Air fry the zucchini for another 5 minutes or until golden and crispy.
