Strawberry Lemonade Chex Mix Ingredients
- Chex cereal
- White melting wafers
- Powdered sugar
- Freeze-dried strawberries
- True Lemon powder
- Lemon Zest
How To Make Strawberry Lemonade Chex Mix
1. Line two baking sheets with parchment or wax paper, and set aside.
To first make the “strawberry half” of the Chex Mix, place 4½ cups of the Chex cereal into a large bowl and set aside.
Pour ⅓ cup powdered sugar into a large gallon-size ziplock bag and set aside.
Using a food processor or spice grinder, grind the freeze-dried strawberries into a fine powder.
2. Pour the strawberry powder into the bag with the powdered sugar and mix it together until it is combined.
3. Place 1 cup of the white melting wafers into a glass or microwave-safe dish, and microwave for 30 seconds.
Remove from the microwave and stir. Continue to microwave in 15-second intervals, stirring between each interval, until completely melted and smooth.
Pour the melted white chocolate over the Chex cereal and gently mix together until the cereal is fully coated.
4. Pour the coated cereal into the ziplock bag with the powdered sugar and strawberry powder mixture, seal the bag, and shake until the cereal is well-coated with the powdered sugar mixture.
Dump the cereal onto one of the lined baking sheets and spread it out evenly into a single layer over the sheet.
Allow to cool for 30 minutes.
5. Meanwhile, to make the “lemon half” of the Chex Mix, place the remaining 4½ cups of Chex cereal into a large bowl. (It can be the same one you used before; it’s okay if there is dried, melted chocolate around the bowl from mixing the first half earlier.)
Place the remaining ¾ cup powdered sugar, two packets of True Lemon powder, and half of the lemon zest into a large gallon-size ziplock bag. Mix together until evenly combined, and set aside.
Place the remaining 1 cup of the white melting wafers into a glass or microwave-safe dish (can be the same one you used before to melt the first half of the wafers), and microwave for 30 seconds.
Remove from the microwave and stir. Continue to microwave in 15-second intervals, stirring between each interval, until completely melted and smooth.
Stir in the remaining half of the lemon zest into the melted white chocolate.
Pour the melted white chocolate mixture over the Chex cereal and gently mix together until the cereal is fully coated.
6. Pour the coated cereal into the ziplock bag with the lemon mixture, and seal the bag. Shake until the cereal is well-coated with the lemon mixture.
7. Dump the cereal onto the other lined baking sheet and spread it out evenly into a single layer over the sheet.
Allow to cool for 30 minutes.
8. Once cooled, place both of the flavored Chex mixes into one large bowl and mix them together.
Strawberry Lemonade Chex Mix Recipe FAQs
Can I use any type of Chex cereal?
Any type of Chex cereal will work. I used Corn Chex for this batch, but you could use Rice Chex or any other type that pairs well with strawberry lemonade flavors. Chex has a strawberry vanilla flavor that you could try if you wanted even more strawberry goodness.
Do I have to use the True lemon packets?
Using the True Lemon packets (which are just crystallized lemon) really enhances the fresh lemon flavor in this recipe without needing to use any lemon juice, which can cause the melted chocolate to clump or harden.
Can I change up the flavors?
Of course, this recipe is easy to customize! You can use other freeze-dried fruits in place of strawberries, such as freeze-dried blueberries or raspberries, or even non-berry fruits like freeze-dried mangos, peaches, or pineapple.
You can also use different citrus fruits in place of the lemon, such as lime or orange, and use other crystallized citrus powders from the True Citrus brand, like True Lime or True Orange.
How do I store the Chex Mix?
Although the Chex Mix doesn’t require refrigeration, I’ve found that it keeps best and freshest when stored in either the refrigerator or freezer.
Place them in an airtight container or ziplock bag, and store either at room temperature or in the fridge for up to a week or in the freezer for up to 2 months. They will lose their crunch over time and are best enjoyed within 3-4 days.
